Seppeltsfield was established by Joseph Seppelt in 1852. By 1865 it was South Australia's largest winery. This photograph shows an underground wine cellar at Seppeltsfield in a corridor called Lord Hopetoun Drive after Australia's first Governor-General. The bottles shown in the foreground probably contain a Champagne-style sparkling wine which is fermented for a second time in the bottle. The bottles are placed on racks as shown and turned each day so that the sediment gathers in the neck of the bottle and can be removed when the fermentation is complete. |
